Stacey's Sunday Oat Pancakes


Every Sunday morning I whip up some oat pancakes for my growing little family


Oats are a winning grain for a few reasons

✔️ They are a slow release carbohydrate source (giving you sustained energy and keeping you feeling full for longer)

✔️They are a good source of beta-glucan (a type of soluble fibre that will help keep your cholesterol down)

✔️ They taste great – say no more !

My Oat Pancake recipe is pretty simple


1. Lightly beat 2 eggs

2. Mix in 1 ⅓ cup buttermilk

3. Sift in 1 cup of self raising flour and ½ cup wholemeal flour

4. Add ½ cup traditional oats

5. Whisk until smooth

6. Cook batter 2-3 min each side


Enjoy topped with fresh berries, banana, some maple syrup & natural yoghurt. For a higher protein option add some toasted nuts - I usually use chopped almonds, cashews, pecans, pepitas, & shredded coconut and lightly toast in a pan for 5 min.

With a cup of coffee, it’s a perfect start to a Sunday
