This is such a easy pasta dish, perfect for a mid week meal for the family !
Ingredients;
• Approx. 250g penne or similar pasta
• 30g butter • Approx. 400-500g fresh prawn cutlets (peeled, deveined)
• 3 x spring onions, sliced • 1 packet of cherry tomatoes, halved
• 1 garlic clove, crushed
• 300ml carnation light cream for cooking
• ¼ cup lemon juice
• ½ cup frozen peas
• Bunch of asparagus, diced
• 1 zucchini, diced
• Large handful of snow peas
• 2 tbs baby capers
• 200g packet of smoked salmon pieces
Method;
1.) Cook pasta according to packet instructions. Set aside
2.) Heat butter over low heat in fry pan. Add prawns, spring onion, cherry tomatoes & garlic. Cook for about 5 min
3.) Add the rest of the vegetables and cook for a further 5 min
4.) Add the lemon juice, smoked salmon and capers
5.) Stir through cream for cooking and cooked pasta
