Panko crumbed cauliflower

Cauliflower is one of my favourite vegetables... and this oven baked cauliflower coated in panko crumbs, smoked paprika, parmasan & parsley is pretty good! .


1. Chop up roughly half a small cauli into florets and blanch in boiling water for about 4-5min. Set aside to cool

2. Add approx 1 cup of panko crumbs (Japanese breadcrumbs found in Asian section of supermarket), 1 tsp smoked paprika, 1/4 cup parmasan and some chopped parsley to a bowl and mix together

3. Coat the cauli florets in a raw egg and then add the crumb mixture to evenly coat

4. Bake in the oven until golden (usually 40min or so)
