Spinach, Beetroot, Pumpkin & Feta Salad

This is such an easy salad, and makes delicious use of my Dukka recipe also posted under the recipe section of my website.



Ingredients;

· Approx 1/4 butternut pumpkin, diced

· Large handful baby spinach

· Approx 4 baby beets (canned or fresh)

· Approx 100g feta

· Good quality olive oil

· Dukka, to sprinkle


Method;

  1. Roast pumpkin for approx 30min or until soft. Allow to cool.

  2. Place all other ingredients into a salad bowl. Drizzle with olive oil and top with Dukka.

  3. Serve with lean protein source to make a complete meal
